91-93 The 2021 Chablis Mont de Milieu 1er Cru has a small reduction on the nose from a few barrels that had not settled by the time of my visit. The palate is promising with good substance, fine acidity, and unlike some other cuvées, has good grip with more persistence on the finish. Very fine.

There is only a vague hint of the hallmark Mont de Milieu exoticism on the aromas of white peach, ocean spray, lychee and shellfish--infused nose. There is both excellent volume and a seductive texture to the medium-bodied flavors that possess good power while exhibiting very fine length on the saline and attractively dry finale. Some patience should help to add depth.

Bright and clear with delicate green reflections. This highly aromatic 1er Cru offers ripe citrus fruits and white flowers. The palate is well-rounded with remarkably persistent aromas.

Varietal: Chardonnay

There are few white wine grape varietals as famous or widely appreciated as the Chardonnay, and with good reason. This highly flexible and adaptable grape quickly became a favorite of wineries due to its fairly neutral character. This neutrality allows the wineries to really show off what they are capable of doing, by allowing features of their terroir or aging process to come forward in the bottle. As well as this, most high quality wineries which produce Chardonnay wines take great efforts to induce what is known as malolactic fermentation, which is the conversion of tart malic acids in the grapes to creamy, buttery lactic acids associated with fine Chardonnay. Whilst the popularity of Chardonnay wines has fluctuated quite a considerable amount over the past few decades, it seems the grape varietal allows enough experimentation and versatility for it always to make a successful comeback.
