There are three releases from the To Kalon Vineyard in Oakville, and the 2021 Cabernet Sauvignon Beckstoffer To Kalon FnA comes from the F and A blocks. It's a more elegant, round, open-knit beauty displaying perfumed red and black fruits as well as some classic To Kalon floral and incense nuances. It still brings ample depth and richness, has velvety tannins, full-bodied richness, and a layered, seamless mouthfeel. It should keep for 15-20 years and age gracefully on its overall balance. ... For Tor's 2021 Cabernet Sauvignon Beckstoffer To Kalon Vineyard FnA, winemaker Jeff Ames blended fruit from Block A (near the road) and F (from the back of the property), because, according to owner Tor Kenward, "A didn't stand on its own." It does come across as slightly more open-knit and perhaps less concentrated than Tor's other To Kalon bottlings, but that's nit-picking at this quality level. Mixed red and black cherries and ground allspice aromas are joined by loamy earth scents on the nose, while the medium to full-bodied palate finishes long and richly textured.
Winery
The 2021 To Kalon FnA is aromatically a mix of blackberries, tar, and forest floor. On the palate this wine is very supple, with purity of fruit, spice, and less obvious structure than the other To Kalon‘s of this vintage. This wine shows tremendous breadth on the palate, length on the finish, and of the three To Kalon‘s from this Vintage, this bottling will be the most approachable at a younger age.

Varietal: Cabernet Sauvignon

For most of us, when we look for red wines in a wine store or supermarket, the name Cabernet Sauvignon stands out as a mark of quality and reliability. The same can be said for the way those who cultivate the grapevines see them, too, as part of the reason Cabernet Sauvignon varietal grapes have had so much success all over the world is due to their hardiness against frost, reliability in regards to yield and quality, and great resistance to rot. As such, Cabernet Sauvignon is a winemaker's dream of a grape, consistently delivering excellence alongside a few pleasant surprises. Despite the fact that the grape on its own in a young wine can often be a bit overpowering, too astringent and challenging for many tastes, it is the perfect grape varietal for blending and aging in oak. Such a truth has been displayed for centuries now in some of the finest wineries on earth, for whom Cabernet Sauvignon grapes are the grape which adds the punch to their world-beating blended wines.

Region: California

It isn't difficult to see how California became one of the world's most important, successful and influential wine regions. Since the first vines were planted in the state by Spanish pioneers in the 18th century, the region has made the most of its ideal climatic conditions, which range from hot, dry and arid to windswept and cool, for vineyard cultivation and wine production. Today, California has almost half a million acres under vine, and hundreds of independent and well established wineries dotted across its vast wine-making areas. Californian wines range from the traditional, and those emulating fine Old World wines, to the experimental and unique, and it is the home to many of the world's most exciting and trailblazing wineries producing excellent bottles for the global market.

Country: United States

For three hundred years now, the United States has been leading the New World in wine production, both in regards to quantity and quality. Wine is actually produced in all fifty states across the country, with California leading the way by an enormous margin. Indeed, as much as eighty-nine percent of all wines to come out of the United States are produced in California, where the fertile soils and sloping mountain sides, coupled with the long, hot summers provide ideal conditions for producing high quality, European style red, white and rosé wines. With over a million acres of the country under vine, the United States sits comfortably as the fourth largest wine producer in the world, where imported grape varietals from all over the Old World are processed using a successful blend of traditional and contemporary techniques.
