More moderate wood influence stops short of overshadowing the attractively spicy, pure and floral nose of shellfish, sea breeze and quinine. The medium-bodied flavors are rich to the point of opulence thanks to the abundance of sappy dry extract that also serves to buffer the firm acid spine shaping the wonderfully complex, persistent and balanced finale. Excellent and the best wine in the range, hands down.

The 2022 Chablis Les Preuses Grand Cru has a well-defined bouquet that gains intensity with aeration: Golden Delicious, kiwi fruit, light flinty aromas coming through with time. The palate is well-balanced with a fine bead of acidity. A little oak to be subsumed, though it falls down on the finish as if this Les Preuses runs out of ideas two-thirds of the way through. So, it ends on a bit of a flat note. Tasted blind at the BIVB tasting in Chablis.

Light yellow in color with golden reflections. The nose i srich yet delicate with mineral, creamy, floral and slightly iodized notes combined with a touch of honey and dried fruits. The palate reveals a firect attack and powerful, well-honed and distintive mis-palate.

Varietal: Chardonnay

Of all the white wine grape varietals, surely the one which has spread the furthest and is most widely appreciated is the Chardonnay. This green skinned grape is now grown all over the Old and New Worlds, from New Zealand to the Americas, from England to Chile, and is one of the first varietals people think of when considering white wine grapes. Perhaps this is because of its huge popularity which reached a peak in the 1990s, thanks to new technologies combining with traditional methods to bring the very best features out of the Chardonnay grape, and allow its unique qualities to shine through. Most fine Chardonnay wines use a process known as malolactic fermentation, wherein the malic acids in the grape juice are converted to lactic acids, allowing a creamier, buttery nature to come forward in the wine. No grape varietal is better suited to this process than Chardonnay, which manages to balance these silky, creamy notes with fresh white fruit flavors beautifully.
