Fevre's Beauroy has a little bit of oak in the blend. From a tank sample, this has been on fine lees since Spring 2022, with bottling due in Spring 2023. Seguier picked early here to avoid over-ripeness. Nice weight on the palate which lacks the density of some of the best premiers crus but makes for a very classy, pure and highly-enjoyable wine. Good salinity to finish. Seguier says that the adoption of Organic/Bio principles has really helped Beauroy.

The 2021 Chablis 1er Cru Beauroy is pretty and aromatic, bursting with notes of orange zest, green apple, white flowers and oyster shell, followed by a medium to full-bodied, satiny and racy palate that concludes with a long, saline finish.

This is ripe enough to have elusive suggestions of exotic fruit on the white peach, maritime and quinine. There is excellent mid-palate density to the rich, delicious and solidly intense middleweight flavors that conclude in an agreeably dry and again, saline-suffused finish. This will need to add depth but a few years of keeping should be sufficient.

88-90 The 2021 Chablis Beauroy ler Cru comes from 1.1-hectares split over three parcels in Troisème with a southerly-orientation. It has a "sunny" bouquet with hints of yellow plum and quince, but still well-defined and focused, a light flintiness emerging with time. The palate is well balanced with ample weight, fine acidity, not terribly complex and maybe it doesn't deliver the same definition as Fèvre's other Premier Crus on the finish. But it should drink well for several years.

Varietal: Chardonnay

There are few white wine grape varietals as famous or widely appreciated as the Chardonnay, and with good reason. This highly flexible and adaptable grape quickly became a favorite of wineries due to its fairly neutral character. This neutrality allows the wineries to really show off what they are capable of doing, by allowing features of their terroir or aging process to come forward in the bottle. As well as this, most high quality wineries which produce Chardonnay wines take great efforts to induce what is known as malolactic fermentation, which is the conversion of tart malic acids in the grapes to creamy, buttery lactic acids associated with fine Chardonnay. Whilst the popularity of Chardonnay wines has fluctuated quite a considerable amount over the past few decades, it seems the grape varietal allows enough experimentation and versatility for it always to make a successful comeback.
