The best value in the Tor lineup—at least for the moment—is the 2021 Cabernet Sauvignon Vaca Ridge Vineyard, from the east side of Oakville. It includes 15% Cabernet Franc, giving the nose some dried-herb complexity to go with scents of crushed stone and mixed red and black cherries. In the mouth, it's full-bodied and concentrated, supple and rich, with a long, tannic finish. ... More details

Blackberries and black cherries with black currants. Cedar undertones. Touch of wood. Medium to full body, with juicy fruit and creamy fine tannins that show lovely length. A white pepper and slate undertone. Minerally. New bottling from here. Drink in 2025 and beyond.

The 2021 Cabernet Sauvignon Vaca Ridge is a big, ripe, sexy wine offering both red and blue fruits with some chocolaty oak and spicy, incense nuances. A blend of 75% Cabernet Sauvignon and 25% Cabernet Franc, it has good mid-palate depth, ripe, velvety, yet building tannins, and a great finish. It's certainly impeccably made, and I love its purity and overall approachable, textured style. I would drink bottles over the coming 10-12 years, but I wouldn't be surprised to see it keep longer. It's another great value in this lineup.

The 2021 Cabernet Sauvignon Vaca Ridge emerges from the Upper Range development in the hills above Rutherford. Dark cherry, plum, mocha, spice and tobacco are nicely pushed forward. There's plenty of fruit intensity and immediacy, but I find the 2021 slightly lacking in the structure or the grip of a mountain site.

Overview
Deep garnet-purple colored, the 2021 Vine Hill Ranch Cabernet Sauvignon is quite shut down to start, needing a lot of shaking to bring out notes of crushed red and blackcurrants, fresh blackberries, and mulberries, leading to hints of pencil shavings, iron ore, and forest floor. The full-bodied palate is built like a brick house with a solid structure of firm, grainy tannins and seamless freshness supporting the intense black and red berry flavors, finishing very long and earthy. Love it!

Varietal: Cabernet Sauvignon

For most of us, when we look for red wines in a wine store or supermarket, the name Cabernet Sauvignon stands out as a mark of quality and reliability. The same can be said for the way those who cultivate the grapevines see them, too, as part of the reason Cabernet Sauvignon varietal grapes have had so much success all over the world is due to their hardiness against frost, reliability in regards to yield and quality, and great resistance to rot. As such, Cabernet Sauvignon is a winemaker's dream of a grape, consistently delivering excellence alongside a few pleasant surprises. Despite the fact that the grape on its own in a young wine can often be a bit overpowering, too astringent and challenging for many tastes, it is the perfect grape varietal for blending and aging in oak. Such a truth has been displayed for centuries now in some of the finest wineries on earth, for whom Cabernet Sauvignon grapes are the grape which adds the punch to their world-beating blended wines.

Region: California

When it comes to New World wine regions, it is widely agreed that many of the finest wines are grown and produced in California. The long stretches of coastline and the valleys and mountainsides which come off them are ideal areas for vine cultivation, and for over a century now, wineries have found a perfect home in the hot, dry state, with many of the wines produced here going on to reach world class status. The state is greatly helped by the brisk oceanic winds which cool the otherwise hot and dry vineyards, which hold mineral rich soils covering vast areas and featuring many established wineries. The state is split into four main regions, the largest by far being the central valley which stretches over three hundred miles in length.

Country: United States

For three hundred years now, the United States has been leading the New World in wine production, both in regards to quantity and quality. Wine is actually produced in all fifty states across the country, with California leading the way by an enormous margin. Indeed, as much as eighty-nine percent of all wines to come out of the United States are produced in California, where the fertile soils and sloping mountain sides, coupled with the long, hot summers provide ideal conditions for producing high quality, European style red, white and rosé wines. With over a million acres of the country under vine, the United States sits comfortably as the fourth largest wine producer in the world, where imported grape varietals from all over the Old World are processed using a successful blend of traditional and contemporary techniques.

Appellation: Napa Valley

California has long been recognized as a wonderfully rich and fertile location for viticulture, and hundreds of years now, vintners in the United States of America have used the valleys and mountain sides of California for gradually building their own wine culture, based on techniques and practices brought over from the old countries. When it comes to Californian wines of real quality and distinction, however, there is nowhere quite like the Napa Valley, which is now widely considered to be one of the world's premier wine regions, and very much the standard bearer for modern, American wines. With Cabernet Sauvignon, Chardonnay, Pinot Noir, Merlot and Zinfandel varietal grapes all growing well in Napa Valley, the region produces an impressive range of wines, which have had an enormous impact on the Old and New Worlds, and have changed viticulture forever.
