Visciole di Cantiano, an antique variety of wild sour cherry, grows wild on Vicario’s family farm property at Villa Sant’Andrea, in Cortona, Italy, where they planted a small orchard of these fruits. On the verge of disappearing, the Visciole di Cantiano variety never developed much of a commercial presence as they are fragile, need to be hand-picked, are consumed by flocks of birds the moment they become ripe, and spoil quickly to boot. Strangely Darwinian, this cherry tree’s off shoots have a tendency to suffocate the tree if not maintained carefully. Nonetheless, Vicario believe it is the best cherry for liqueur making, and monitors them closely to collect them before the birds descend. Thanks to their dedication, the world has been gifted this fine cherry liqueur, bursting with tart, dark cherry from nose to finish with faint notes of fennel and clove.
