The 2020 Jaspis Pinot Noir Zipsin is deep, ripe and seductive on the very elegant nose, displaying perfectly ripe cherry and dark berry aromas intertwined with meaty, floral and delicate but substantial earthy nuances. Silky on the palate, with concentrated but refreshing structured fruit with fine tannins that intermingle with both texture and acidity, particularly 24 hours after the bottle has been uncorked. With air, the Pinot that is initially a bit tart becomes an intense and silky, pure and elegant red with a dry and cleansing finish. This reveals remarkable acidity that still needs time to fully integrate and soften the edges, but in three to five years, it will have turned into finessed charm. 13.5% stated alcohol. Natural cork stopper. Tasted in November 2022.

Varietal: Pinot Noir

Pinot Noir is one of the planet's most widely grown and enjoyed grape varietals, and thanks to the popularity of the key wines it is associated with – Burgundy and Champagne – it has successfully spread from its native home in France to much of the wine producing world. Pinot Noir means 'black pine' in French, and this refers to the extremely dark, inky color of the fruit, and the fact that it grows in conical bunches, resembling a large pine cone. It has long been revered for its wide range of refreshing, summery flavors, and the fact that it produces red wines of a beautiful garnet color and light body. Long gone are the days of mass produced, sickly sweet white wines which were once the chief exports of this fascinating and ancient wine producing country, and they have been replaced with something far more sophisticated. Whilst Germany continues to produce a relatively large amount of dessert wine, the wineries of the south of the country have reverted their attention to the production of drier, more elegant wines which really make the most of the fine grape varieties which flourish there. Many of the wineries dealing primarily with the excellent Riesling grapes have produced some truly exceptional dry and semi-sweet wines over the past few years, and it seems the world has finally woken up and noticed the extremely high quality of the distinctive produce coming out of Germany today.
